2 ripe avocados
140 grams sour cream
1 tablespoon vinegar
2 tablespoons sunflower or other vegetable oil
5 tablespoons mustard powder
5 tablespoons white sugar
300 grams red caviar
a pinch of salt
a pinch of ground black pepper
Directions
Cut the avocados in half, then peel it and remove the pit. Make an incision on each
half starting on the wide part and working your way down to the narrower part of
the avocado, but do not cut it all the way apart. Then, lay the fanned out halves
on separate plates. Whip the sour cream with the vinegar, sunflower oil, mustard
powder, sugar, salt, and pepper together. Pour the filling into the avocado. Put
four spoonfuls of caviar on top of the filling on each plate. Serve immediately.
